  • Total Time: 24 minute
  • Yield: 6-8 servings

Description

This easy slow cooker hamburger helper transforms a classic into a homemade, comforting meal. Tender ground beef and macaroni simmer in a rich, creamy, cheesy tomato sauce, perfect for a fuss-free weeknight dinner.

Ingredients

  • 1 tbsp olive oil (optional, if using leaner beef)
  • 1.5 lbs ground beef (80/20 recommended)
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (15 oz) can crushed tomatoes, undrained
  • 4 cups beef broth, low sodium
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning
  • 1/2 tsp black pepper
  • 1 tsp salt (or to taste)
  • 2 cups elbow macaroni, uncooked
  • 1 cup whole milk
  • 2 cups shredded cheddar cheese
  • Optional: bell peppers, mushrooms, spinach

Instructions

  • In a large skillet over medium-high heat, brown ground beef, breaking it apart. Drain excess fat.
  • Add diced onion to the skillet and cook until softened (3-5 minutes). Stir in minced garlic and cook for 1 minute more until fragrant.
  • Transfer browned beef, onion, and garlic to the slow cooker. Add diced tomatoes, crushed tomatoes, beef broth, smoked paprika, Italian seasoning, pepper, and salt. Stir well.
  • Cover and cook on LOW for 3-4 hours or HIGH for 2-3 hours.
  • Stir in uncooked elbow macaroni, milk, and shredded cheddar cheese. Increase slow cooker heat to HIGH.
  • Cover and cook for an additional 15-25 minutes, or until pasta is tender and sauce has thickened. Stir occasionally to prevent sticking.
  • Taste and adjust seasoning if needed. Serve immediately.
