This easy slow cooker hamburger helper transforms a classic into a homemade, comforting meal. Tender ground beef and macaroni simmer in a rich, creamy, cheesy tomato sauce, perfect for a fuss-free weeknight dinner.
Ingredients
- 1 tbsp olive oil (optional, if using leaner beef)
- 1.5 lbs ground beef (80/20 recommended)
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (15 oz) can crushed tomatoes, undrained
- 4 cups beef broth, low sodium
- 1 tsp smoked paprika
- 1 tsp Italian seasoning
- 1/2 tsp black pepper
- 1 tsp salt (or to taste)
- 2 cups elbow macaroni, uncooked
- 1 cup whole milk
- 2 cups shredded cheddar cheese
- Optional: bell peppers, mushrooms, spinach
Instructions
- In a large skillet over medium-high heat, brown ground beef, breaking it apart. Drain excess fat.
- Add diced onion to the skillet and cook until softened (3-5 minutes). Stir in minced garlic and cook for 1 minute more until fragrant.
- Transfer browned beef, onion, and garlic to the slow cooker. Add diced tomatoes, crushed tomatoes, beef broth, smoked paprika, Italian seasoning, pepper, and salt. Stir well.
- Cover and cook on LOW for 3-4 hours or HIGH for 2-3 hours.
- Stir in uncooked elbow macaroni, milk, and shredded cheddar cheese. Increase slow cooker heat to HIGH.
- Cover and cook for an additional 15-25 minutes, or until pasta is tender and sauce has thickened. Stir occasionally to prevent sticking.
- Taste and adjust seasoning if needed. Serve immediately.
