Ingredients
- 1 scoop (approx 30g) vanilla or unflavored protein powder
- 1 cup graham cracker crumbs
- 1/4 cup melted butter or coconut oil
- 2 tbsp milk (dairy or non-dairy)
- 2 tbsp maple syrup, honey, or liquid sweetener
- 1/2 cup mini marshmallows (divided)
- 1/2 cup chocolate chips (divided)
Instructions
- Prepare your pan by lining an 8×8 inch baking pan with parchment paper, leaving an overhang, and lightly spraying with non-stick spray.
- In a large bowl, whisk together protein powder and graham cracker crumbs. In a separate bowl, combine melted butter, sweetener, and milk. Pour wet into dry and mix until just combined.
- Press two-thirds of the mixture firmly into the bottom of the prepared pan.
- Sprinkle half of the mini marshmallows and chocolate chips over the base. Crumble the remaining protein bar mixture on top, then scatter the rest of the marshmallows and chocolate chips.
- Bake at 325°F (160°C) for 15-20 minutes, until marshmallows are golden and puffed. Do not overcook.
- Cool completely in the pan on a wire rack for 1-2 hours before lifting out with parchment paper and cutting into 12-16 bars.
