Ingredients
- 4 medium sweet potatoes
- 1 lb ground beef (85/15 or 90/10 recommended)
- 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/4 cup beef broth (or chicken/vegetable)
- 1/2 cup shredded cheddar cheese (optional)
- Salt and black pepper to taste
- Fresh cilantro or parsley, chopped (for garnish, optional)
- Olive oil (for sweet potatoes, optional)
Instructions
- Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork, rub with olive oil (optional), and bake for 45-60 minutes until tender.
- While sweet potatoes bake, brown ground beef in a large skillet over medium-high heat. Drain excess grease.
- Add diced onion to the skillet and cook until softened (5-7 minutes). Stir in minced garlic, cumin, chili powder, and smoked paprika; cook for 1 minute until fragrant.
- Pour in beef broth and simmer for 2-3 minutes, scraping up browned bits. Season with salt and pepper.
- Once sweet potatoes are cool enough, slice lengthwise. Scoop out some flesh, add it to the beef mixture, mash lightly, and combine.
- Spoon the filling back into the sweet potato shells. If using, sprinkle with shredded cheese.
- Bake for another 10-15 minutes, or until heated through and cheese is melted. Broil for 2-3 minutes for a golden top, if desired.
- Garnish with fresh cilantro or parsley and serve warm.
