Ingredients
- 1 ½ cups all-purpose flour (or whole wheat pastry flour)
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon ground cinnamon (optional)
- 1 very ripe large banana, mashed (about ½ cup)
- ½ cup unsweetened apple puree/applesauce
- ¼ cup neutral oil (e.g., grapeseed, avocado)
- ½ cup whole milk (or unsweetened dairy-free alternative)
- 1 teaspoon pure vanilla extract
Instructions
- Preheat and Prepare: Preheat oven to 350°F (175°C). Grease and flour a 6-inch round cake pan or line with parchment.
- Combine Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and cinnamon (if using).
- Combine Wet Ingredients: In a large bowl, mash banana until smooth. Stir in apple puree, oil, milk, and vanilla extract until well combined.
- Mix Batter: Pour dry ingredients into wet ingredients. Fold gently with a spatula until just combined. Do not overmix.
- Bake: Pour batter into prepared pan. Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
- Cool: Let cool in the pan for 10-15 minutes, then invert onto a wire rack to cool completely before frosting.
