Ingredients

  • 1/2 cup cold water
  • 4 (0.25 oz) packets unflavored powdered gelatin (or 4 tablespoons)
  • 1 cup granulated sugar, divided
  • 1 cup fruit juice (e.g., cherry, grape, apple, orange), no pulp
  • 1/2 teaspoon citric acid, plus more for coating
  • 1/4 teaspoon malic acid, plus more for coating (optional, but recommended for complex sourness)
  • Optional: 1/4 teaspoon fruit extract (e.g., raspberry, strawberry)
  • Optional: A few drops of gel food coloring

Instructions

  • 1. Bloom Gelatin: In a small bowl, sprinkle gelatin over 1/2 cup cold water. Let sit for 5-10 minutes until bloomed and thick.
  • 2. Dissolve Base: Transfer bloomed gelatin to a small saucepan. Add 1/2 cup granulated sugar. Heat over low heat, whisking constantly, until gelatin and sugar are fully dissolved and mixture is clear. Do not boil.
  • 3. Add Flavor & Sourness: Remove from heat. Stir in fruit juice, 1/2 cup granulated sugar, 1/2 teaspoon citric acid, and 1/4 teaspoon malic acid (if using). Add optional fruit extract and food coloring. Taste and adjust sourness if desired.
  • 4. Pour into Molds: Carefully pour the warm liquid into silicone gummy molds using a spout-equipped measuring cup. Work quickly.
  • 5. Chill & Set: Refrigerate molds for at least 2-3 hours, or preferably overnight, until gummies are completely set.
  • 6. Demold & Coat: Gently pop gummies out of molds. In a small bowl, combine 1/4 cup granulated sugar with 1/2 teaspoon citric acid and 1/4 teaspoon malic acid for coating. Toss gummies in the sugar-acid mixture until evenly coated. Shake off excess.
  • 7. Store: Store finished gummies in an airtight container at room temperature for up to 1-2 weeks.
