  • 2 medium-sized sweet potatoes (about 1.5 lbs), peeled and cut into 1/4-1/2 inch fries
  • 2 tbsp high smoke point oil (e.g., avocado or refined coconut oil)
  • 1 tbsp cornstarch or arrowroot powder
  • 1 tsp salt, or to taste
  • 1/2 tsp black pepper, or to taste
  • 1/2 tsp smoked paprika (optional, for flavor and color)

Instructions

  • Preheat oven to 400°F (200°C) and place a large baking sheet inside to heat.
  • In a large bowl, toss sweet potato fries with oil until evenly coated.
  • Sprinkle cornstarch/arrowroot powder over fries and toss until thoroughly coated.
  • Add salt, pepper, and smoked paprika (if using), and toss again to distribute.
  • Carefully remove the hot baking sheet from the oven and arrange fries in a single layer, ensuring they do not touch or overlap. Use two sheets if necessary.
