Description

Achieve unbelievably tender, flavor-packed pork tenderloin with minimal effort using your slow cooker. Infused with a rich, homemade teriyaki sauce, this dish is perfect for a delicious weeknight meal or easy entertaining.


Ingredients

  • 1.5 lbs pork tenderloin, trimmed
  • 1 tbsp olive oil (for searing, optional)
  • 1/2 cup low-sodium soy sauce (or tamari for GF)
  • 1/4 cup honey or packed light brown sugar
  • 2 tbsp rice vinegar
  • 1 tbsp grated fresh ginger
  • 2 cloves garlic, minced
  • 1/2 cup chicken or vegetable broth
  • 12 tbsp cornstarch
  • 23 tbsp cold water
  • 1/2 tsp sesame oil (optional, for finishing)
  • Sesame seeds and sliced green onions, for garnish (optional)

Instructions

  • Step 1: Sear Pork (Optional): Heat olive oil in a large skillet over medium-high heat. Sear pork tenderloin on all sides until golden brown, about 2-3 minutes per side. Transfer to the slow cooker.
  • Step 2: Prepare Teriyaki Sauce: In a medium bowl, whisk together soy sauce, honey (or brown sugar), rice vinegar, ginger, garlic, and broth. Pour the sauce over the pork tenderloin in the slow cooker.
  • Step 3: Slow Cook: Cover and cook on LOW for 2.5 to 3.5 hours, or on HIGH for 1.5 to 2.5 hours, until pork reaches an internal temperature of 145°F (63°C) and is fork-tender.
  • Step 4: Thicken Sauce: Carefully remove pork to a cutting board, tent with foil. In a small bowl, whisk cornstarch and cold water to create a slurry. Pour slurry into the slow cooker liquid, whisking constantly. Increase slow cooker to HIGH (or transfer liquid to a saucepan) and cook for 10-15 minutes, or until sauce thickens.
  • Step 5: Slice and Serve: Slice pork into medallions. Drizzle with thickened teriyaki sauce. Garnish with sesame seeds and green onions, and a small drizzle of sesame oil if desired.
