  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 cup low-sodium soy sauce (or tamari for GF)
  • 1/4 cup mirin
  • 2 tbsp sake (optional, or substitute chicken broth)
  • 1 tbsp brown sugar or honey (adjust to taste)
  • 1 tsp toasted sesame oil
  • 2 green onions, thinly sliced, for garnish
  • 1 tbsp toasted sesame seeds, for garnish
  • (Optional: 1 tsp cornstarch + 1 tbsp cold water for thicker sauce)

Instructions

  • 1. Prepare the Steak: Trim excess fat from steak and cut into 1-inch cubes. Pat thoroughly dry with paper towels. Season generously with salt and pepper.
  • 2. Sear the Steak Bites: Heat oil in a large skillet over medium-high heat. Add half of the steak cubes in a single layer; sear for 2-3 minutes per side until browned. Remove to a plate. Repeat with remaining steak.
  • 3. Build the Teriyaki Glaze: Reduce heat to medium. Add garlic and ginger to the skillet; sauté for 30 seconds until fragrant. Pour in soy sauce, mirin, sake (if using), and brown sugar/honey. Simmer, stirring, until sugar dissolves and sauce slightly thickens (2-3 minutes). (If thickening with cornstarch, stir slurry in now).
  • 4. Combine and Finish: Return seared steak bites to the skillet with the glaze. Toss to coat and cook for 1-2 minutes until warmed through and coated. Stir in toasted sesame oil.
  • 5. Garnish and Serve: Transfer to a platter, garnish with green onions and sesame seeds. Serve immediately.
