Ingredients
- 1 ½ cups fine tiger nut flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 teaspoon ground cinnamon
- 2 large eggs (or 2 flax eggs)
- ½ cup maple syrup
- ¼ cup melted coconut oil
- ½ cup unsweetened applesauce
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease.
- In a large bowl, whisk together tiger nut flour, baking powder, baking soda, salt, and cinnamon.
- In a separate medium bowl, whisk together eggs (or flax eggs), maple syrup, melted coconut oil, applesauce, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Do not overmix.
- Divide the batter evenly among the prepared muffin cups. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
