Ingredients
- 1 ½ cups all-purpose flour
- ½ cup nutritional yeast
- 1 teaspoon fine sea salt
- ½ teaspoon smoked paprika (optional)
- ¼ teaspoon garlic powder (optional)
- ½ cup (1 stick) cold vegan butter, cubed
- ⅓ cup ice-cold water (or more, as needed)
Instructions
- In a large bowl, whisk together flour, nutritional yeast, salt, smoked paprika, and garlic powder.
- Cut the cold vegan butter into the dry ingredients using your fingertips or a pastry blender until mixture resembles coarse crumbs.
- Gradually add ice-cold water, 1 tablespoon at a time, mixing until dough just comes together. Do not overmix.
- Form dough into a flat disc, wrap in plastic, and chill in the refrigerator for at least 30 minutes.
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- On a lightly floured surface, roll out chilled dough to 1/16 to 1/8 inch thickness.
- Cut out cracker shapes using a small cookie cutter or knife. Transfer to prepared baking sheets.
- Bake for 12-18 minutes, or until golden brown and crispy.
- Cool completely on a wire rack before serving or storing.
