Craft these delightful homemade watermelon gummies with ease. Bursting with fresh watermelon flavor, they offer a perfect chewy texture.
Ingredients
- 1.5 cups (360ml) fresh or good quality store-bought watermelon juice, divided
- 1/2 cup (100g) granulated sugar
- 2 tablespoons (30ml) light corn syrup
- 4 tablespoons (4 packets) unflavored gelatin powder
- 1/2 teaspoon citric acid
- 1/4 teaspoon watermelon extract (optional)
- 1–2 drops red or pink food coloring (optional)
Instructions
- 1. Prepare Molds: Lightly grease silicone gummy molds and place them on a baking sheet.
- 2. Bloom Gelatin: In a small bowl, sprinkle gelatin over 1/2 cup cold watermelon juice. Let sit 5-10 minutes until bloomed.
- 3. Heat Mixture: In a saucepan, combine remaining 1 cup watermelon juice, sugar, and corn syrup. Heat over medium-low, stirring until sugar dissolves. Do not boil.
- 4. Dissolve Gelatin: Remove from heat. Add bloomed gelatin to the warm mixture, stirring until completely dissolved. Stir in citric acid, extract (if using), and food coloring (if using).
- 5. Pour & Chill: Carefully pour the mixture into prepared molds. Refrigerate for 2-3 hours, or until firm.
- 6. Demold & Store: Gently pop gummies from molds. Store in an airtight container at room temperature or in the refrigerator.
