- 1 lb lean ground chicken, turkey, or pork
- 1 tbsp fresh ginger, grated
- 3 cloves garlic, minced
- 1 (14 oz) bag coleslaw mix (shredded cabbage & carrots)
- 1/4 cup low-sodium soy sauce (or tamari for gluten-free)
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1/4 tsp black pepper
- Optional garnishes: sliced green onions, sesame seeds, sriracha
Instructions
- Step 1: Brown the Meat and Aromatics: Heat a large skillet over medium-high heat. Add ground meat and cook, breaking it up, until browned and no longer pink. Drain excess fat. Stir in grated ginger and minced garlic; cook for 1 minute until fragrant.
- Step 2: Sauté the Cabbage Mixture: Add coleslaw mix to the skillet. Sauté for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp.
- Step 3: Combine and Season: Pour in soy sauce, rice vinegar, sesame oil, and black pepper. Stir well to combine all ingredients and let flavors meld for 2-3 minutes. Taste and adjust seasoning as needed.
- Step 4: Serve and Garnish: Divide the hot egg roll mixture among bowls. Garnish with sliced green onions, sesame seeds, and a drizzle of sriracha, if desired. Serve immediately.
