Ingredients
- 2 cups short-grain sushi rice
- 2 ½ cups water (for cooking rice)
- ½ cup rice vinegar
- 2 tbsp sugar
- 1 tsp salt
- 10–12 sheets nori, cut in half
- 8 oz sashimi-grade tuna, salmon, or yellowtail, thinly sliced
- 1 ripe avocado, thinly sliced
- ½ English cucumber, julienned
- 2 scallions, thinly sliced
- Optional: imitation crab, cooked shrimp, mango strips
- For serving: Soy sauce, wasabi, pickled ginger, sriracha mayo
Instructions
- 1. Cook the sushi rice: Rinse rice thoroughly until water runs clear. Combine rice and water in a saucepan, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 10 minutes.
- 2. Prepare sushi vinegar: While rice cooks, combine rice vinegar, sugar, and salt in a small saucepan. Heat gently, stirring until sugar and salt dissolve. Do not boil. Let cool to room temperature.
- 3. Season the rice: Transfer cooked rice to a large, non-metallic bowl. Slowly pour the cooled sushi vinegar over the rice, gently folding with a rice paddle until evenly distributed and glossy. Fan the rice to cool slightly.
- 4. Prep fillings: Slice all your chosen proteins and vegetables into thin, uniform strips, suitable for rolling. Arrange them attractively on a platter.
- 5. Assemble: Hold a half sheet of nori (shiny side down) in your non-dominant hand. Dip your fingers in water to prevent sticking. Spread about 2-3 tablespoons of seasoned rice thinly over the bottom left corner, extending diagonally two-thirds of the way up.
- 6. Add fillings: Place a few strips of your desired fillings diagonally across the rice, starting from the lower left corner.
- 7. Roll: Gently fold the bottom-left corner of the nori diagonally over the fillings, tucking it in to create a cone shape. Continue rolling tightly but gently towards the top right corner. Use a dab of water on the far corner to seal if needed.
- 8. Serve immediately: Enjoy your hand rolls as soon as they are assembled to ensure the nori remains crisp.
