Ingredients
- 1/4 cup chia seeds
- 1 cup unsweetened Whole30 compliant non-dairy milk (almond, cashew, or light coconut)
- 1–2 Medjool dates, pitted (or 1 tbsp mashed banana/sugar-free apple butter)
- 1/2 tsp pure vanilla extract (ensure compliant)
- Pinch of cinnamon (optional)
- 1 tsp unsweetened cacao powder (optional, for chocolate flavor)
Instructions
- Prepare Sweetener (if using dates): If using dates, pit and soak them in 1-2 tablespoons of hot water for 5 minutes. Blend with a small amount of non-dairy milk until a smooth paste.
- Combine Ingredients: In a jar or bowl, add chia seeds, non-dairy milk, date paste (or other sweetener), vanilla, cinnamon, and cacao powder (if using).
- Initial Stir: Whisk vigorously for 1-2 minutes, ensuring all chia seeds are separated and hydrated.
- Refrigerate and Second Stir: Cover and refrigerate for 15-20 minutes. Stir well again to break up any clumps.
- Chill Overnight: Return to the refrigerator and chill for at least 4 hours, or ideally overnight, until thick and pudding-like.
- Serve: Stir again before serving. Add a splash of milk if too thick. Top with your favorite Whole30 compliant fruits, nuts, or seeds.
