Ingredients
- 1 pint (about 2 cups) fresh blueberries
- 1 cup full-fat Greek yogurt
- 1–2 tablespoons honey or maple syrup (or to taste)
- 1/2 teaspoon vanilla extract (optional)
- 1/4 teaspoon lemon zest (optional)
Instructions
- 1. Prepare Blueberries: Wash blueberries and pat them completely dry with paper towels. Ensure no moisture remains.
- 2. Mix Yogurt Coating: In a medium bowl, combine Greek yogurt, honey/maple syrup, vanilla extract (if using), and lemon zest (if using). Stir until smooth.
- 3. Coat Blueberries: Gently fold blueberries into the yogurt mixture until fully coated, or dunk them individually with a fork.
- 4. Arrange & Freeze: Spread coated blueberries in a single layer on a parchment-lined baking sheet, ensuring they do not touch. Freeze for 1-2 hours, or until solid.
- 5. Store: Transfer frozen blueberries to an airtight freezer-safe container or bag for longer storage. Serve directly from the freezer.
